Cinnamon, Brown Sugar, and Brandy Ice Cream.

Cinnamon, Brown Sugar, and Brandy Ice Cream (created by Emily)

1 cup Milk *

3/4 cup Brown Sugar

2 cups Heavy Whipping Cream *
2 1/2 teaspoons Cinnamon

2 oz. Brandy

* I used 1% milk and light cream. The fat percentage in the milk and the cream will change the consistency of the ice cream: lighter milk and/or cream = flakier, softer ice cream. Higher fat milk/cream makes it taste more sinfully rich and delicious. You can see the flakier texture pretty clearly in the second image.

Whisk together milk and brown sugar until sugar is dissolved (1-2 min.) Mix in cream, add in cinnamon 1 tsp. at a time and taste to see how much you prefer.. Pour into ice cream maker (follow manufacturer’s directions). In the last 3-4 minutes of freezing, add brandy.

Buon appetito.
